Pistachio Paste loses its green colour when it is passed through the pasting machine. Due to the speed of the blades it partially heats the original product giving it a slightly browner appearance. It still maintains a strong pistachio flavour however. This is a useful ingredient in confectionery. Combined with chocolate it is a winning combination or in cakes it will add a strong pistachio flavour without any alterations to texture.
Stir before use as some separation of oil will occur
